Frito Corn Salad

My cousin, Juanita, makes this everytime we get together...it's AMAZING!

2 cups sweet corn (if frozen, thaw it first)
1/2 of a red bell pepper, diced
1/2 of a green bell pepper, diced
1 bundle of green onions, diced
2 Tablespoons mayo (not miracle whip)
2 roma tomatoes, diced (or equivilant of your favorite tomato)
1 bag chili cheese fritos (slightly crushed)

Mix mayo and vegetables. Add crushed fritos and mix.

*You do not have to use the whole bag of fritos. Usually about 3/4 of the bag is good enough.

Egg Drop Soup

6 C. Chicken Broth
1 large Egg, lightly beaten with 1 tsp. sesame oil
1/4 tsp. White Pepper
4 sliced Green Onion tops for garnish
Salt to taste



Bring the broth to a simmer over low medium heat. Very slowly stream in the egg, use a fork to pull strands of the egg gently. Do not stir vigorously; you will have a mess if you do. Add white pepper and salt. Continue to cook until egg is done. Serve promptly.

Broccoli Cheese Casserole

1 small onion
1/2 stick butter
1 pkg. broccoli, cooked
1 can cream of chicken or mushroom soup
1/8 C. water
1/4 C. milk
1/2 C. Velveeta cheese
1 C. Minute Rice, uncooked

Chop onion fine, and cook in butter until the onions are transparent. Then mix everything together and bake for 45 minutes at 350 degrees.

Sweet and Sour Chicken (Not deep fried!)

1 Chicken, cut up into serving pieces
1/2 C. Flour
1 tsp. Salt
1/4 tsp. Black Pepper
Sauce
1 (13 1/2 oz.) can Pineapple Chunks
1 C. Sugar
1 Tbsp. Cornstarch
3/4 C. Cider Vinegar
1 Tbsp. Soy Sauce
1/4 tsp. Ginger
1 chicken Bouillon Cube
1 large Green Pepper, cut into strips

Wash chicken dry, and coat with flour. Heat oil and brown the chicken. Sprinkle with salt and pepper. Drain pineapple and add enough water to the drained liquid to make 1 1/4 cups. Mix sauce ingredients and boil for 2 minutes. Pour this over the chicken. Add pineapple and green pepper. Bake until tender, about 30 to 40 minutes at 350 degrees.

Moussaka

EGGPLANT
2 large eggplants (about 2 3/4 pounds), unpeeled and cut lengthwise into 1/2-inch slices
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper

MEAT SAUCE
2 tablespoons extra-virgin olive oil
1/2 medium yellow onion, chopped
3 cloves garlic, minced
1 pound ground beef
1/2 teaspoon dried oregano
1/8 teaspoon ground allspice
Pinch of ground cloves
1 cinnamon stick, broken in half
1/2 teaspoon kosher salt, plus to taste
Freshly ground pepper
1 1/2 cups whole, peeled, canned tomatoes (with puree), roughly chopped
1 bay leaf

CUSTARD SAUCE
5 tablespoons unsalted butter
6 tablespoons all-purpose flour
3 cups whole milk, room temperature
1 1/2 teaspoons kosher salt
Pinch of ground nutmeg
1 large egg
2 large egg yolks
1/2 cup dried breadcrumbs
3 tablespoons Pecorino Romano (I used freshly grated Parmesan)

Bake the eggplant: Preheat the oven to 475 degrees F. Brush the eggplant slices on both sides with the oil and lay on 2 small or 1 large foil-lined baking sheet. Season with salt and pepper. Cover with foil and bake until the eggplant is soft, about 25 minutes. Set aside covered.

Make the meat sauce. Heat the olive oil in a large skillet over medium-high heat. Add the onion and cook, stirring with a wooden spoon, until lightly browned, about 4 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 1 minute. Add the beef, oregano, allspice, cloves, and cinnamon. Break the meat up into small pieces and season with the 1/2 teaspoon salt and pepper to taste. Cook, stirring occasionally, for about 2 minutes. Lower the heat to medium and cook, stirring, until just cooked but still slightly pink inside, about 1 minute more. Add the tomato and bay leaf and bring to a simmer. Cover, and cook until the sauce is thickened and fragrant, about 20 minutes.

Make the custard sauce. Melt the butter in a medium saucepan over medium heat. Whisk in the flour until smooth. Cook, stirring, for 1 minute. Remove the pan from the heat and add the milk, salt, and nutmeg. Return to the heat and while whisking constantly, bring to a boil. Simmer 2 minutes. Transfer the sauce to a bowl and stir to cool. When the sauce is cool, whisk in the egg and yolks.

Assemble the moussaka. Lower the oven to 350 degrees F. Brush a 9 x 13 x 2-inch casserole dish with the oil. Scatter the breadcrumbs over the bottom of the pan. Lay half of the eggplant in the pan, overlapping the slices if needed. Cover with half of the meat sauce and smooth with a rubber spatula.

Repeat with the remaining eggplant and meat sauce. Pour the custard sauce over the layered mixture and smooth with a rubber spatula. Sprinkle with the Pecorino Romano and bake, uncovered, until lightly browned and the custard is set, about 1 hour.

Remove the moussaka from the oven and let rest for 10 minutes. Use a slotted spoon or spatula to serve.

Washington Apple

1/4 cup of Crown Royal (or to taste)
1/4 cup of Sour Apple pucker(or to taste)
1/2 cup of Cranberry Juice(or to taste)
1/4 cup of Pineapple Juice(or to taste)



Chill all ingredients before mixing.Combine all ingredients and shake well. Pour into shot glasses or over the rocks & enjoy!

White Trash Eggrolls

Package Eggroll Wrappers
Package Sliced Ham Lunch Meat
Package Slice Swiss Cheese
Dill Pickle Spears
Oil (to deep fry)

Place on Eggroll wrapper: Ham, Cheese and Pickle.

Fold egg roll according to instruction on package.

Place in hot oil, and deep fry until roll is brown to dark brown.

The amount of ingredients all depends on how many “pickles” you actually want to make. I usually buy the package of Egg rolls and than buy enough ingredients to complete the egg roll package. I make these as I want them also, it is easy to make them one/two at a time just for a single person serving.

Crockpot Chicken Mole

1 whole 3-5lb chicken, cleaned and giblets/neck discarded
1 can tomato paste
1 Tbsp. chicken base
1/4 cup brown sugar
1 can chicken broth
1 Tablet Abuelita Mexican chocolate
1/4 cup Chili powder
2 Tbsp. ground cumin
2 Tbsp. ground cinnamon
1/2-3/4 cup creamy peanut butter
1 tsp salt

Place all ingredients except chicken into your crock pot. Mix well while heating on high. After chocolate is mostly melted add your chicken. Cover and cook the entire day, or at least 6 hours. Check taste for salt.
To serve, strain sauce and retain. Pull chicken off the bone.

Serve with warm tortillas, make burritos and serve with cheese and sour cream. You can also serve this over white rice.

Mexican Cornbread Casserole

2 boxes cornbread mix
1 lb ground beef
1 small can chopped green chilies
1 package taco seasoning mix
1 can regular corn
1 can creamed corn
1 1/2 cup shredded cheddar cheese

Brown ground beef add taco seasoning per package directions; add green chilies; set aside .
Mix cornbread per package directions; to corn bread add 1/2 can cream corn and 1/2 can drained regular corn
add 1/2 of cornbread mixture in bottom of 9×13 pan; On top of cornbread put meat mixture; remaining can of corn and cream corn over that; now add 1/2 of the cheese; top with remaining cornbread mixture and cheese all over top; bake 350* 35-40 min let set 5 min or so and cut into squares .
