Oatmeal Cookie Pancakes

1 cup old fashioned oats
1 cup all-purpose flour
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
2 ounces, 1/4 cup, chopped walnuts
3/4 cup sour cream
3/4 cup whole milk
2 large eggs
1 teaspoon vanilla extract
2 really ripe bananas, mashed up
3/4 cup raisins
1/2 stick butter, 1/4 cup, melted, plus additional for buttering skillet
Maple syrup or honey, for drizzling

Here's a great tip: if you cannot find really ripe bananas, just nuke them in the microwave for about 15 seconds and they will become super soft for mashing. Mix dry ingredients, the first 7, in a bowl. In a another bowl, mix the wet ingredients, the next 4. Whisk the wet ingredients into the dry until just combined, then fold in the mashed up bananas and the raisins. Stir in the melted butter. Heat a griddle over medium heat and brush with additional melted butter. Cook pancakes, each about 1/3 cup, until bubbles form on the top, then turn. Cakes will cook in about 2 minutes on each side. Keep pancakes tented with foil as they come off the griddle to keep them hot. Serve with drizzled honey or maple syrup over the top.

Verde Enchilada Casserole

recipe came from campbells, on the back of the soup label...but it's SO good!

1 can campbells creamy chicken verde soup
1/2 cup water
1/2 tsp garlic powder
2 cups cubed chicken (cooked)
4 flour tortillas cut into strips or squares (8" tortillas)
1/2 - 1 cup shredded cheese

mix soup, water, garlic, and chicken. stir in tortillas

spread in 2 qt. shallow baking dish. top with cheese. cover.

bake at 350 for 25 minutes or until hot.

***if you can't find the soup, it is still yummy mixing a can of chopped green chilies and cream of chicken soup. (I add a bit of hot sauce when I do it this way)

Crock Pot Lasagna

1 Lb. Ground Ital. Sausage

1 Lb. Ground Beef or Turkey

2 Jars Spaghetti Sauce

8 Uncooked Lasagna Noodles

15 Ounce Container Ricotta Cheese

4 Cups Shredded Mozzerella Cheese

Italian Seasoning

Garlic Salt

Whatever veggies or other stuff you like in lasagna. I love zucchini in there.

Brown sausage and ground beef and drain. Spray crock pot with cooking spray. Pour a small amount of spaghetti sauce in the bottom of the crock pot. Layer the ingredients (I do meat, noodles, sauce, veggies, ricotta, mozzerella) in 2-3 layers or whatever fits. You'll have to break the noodles in half to make them fit. Season each layer. End with mozzerella cheese. Cover with lid and cook for about 5 hours on high.
